Salting & Curing Salumi Making Workshop
Interested in learning to cure your own Italian style salumi?
Come and join us for a day in West Gippsland where we are the guests of Dave Cann, the owner of award winning cooking school String & Salt. Dave will take you through the basics of making and curing your own salami at home, covering selecting the right cuts of meat and fat, choosing the right casings, mincing, seasoning and filling.
Get a hands on salami making experience as we go through the process of making Calabrese style Salami at home. Dave will guide you through choosing the right cuts of pork and fat, seasoning and salting and selecting the casings and the right curing environment.
This class will cover salami, prosciutto, capocollo, pancetta and basic sausage making.
You’ll each get to make your own salami to cure and enjoy. We’ll cure the salami in our all-year-round CLEAVER curing cabinet and you can pick it up to enjoy when it’s ready.
This class will include generous salumi themed meal and refreshments, and of course plenty of handcrafted charcuterie to munch on to give you inspiration for your own homemade goodies in the future. You’ll be able to take home your own salami to share with friends and family.
